The 30% problem
Marketplace platforms commonly take 20–35% of each order. On a $40 order, up to $14 disappears before food costs. Many venues discover their busiest channel is also their least profitable — sometimes a loss-maker once packaging and labour are counted.
You also lose the customer
Order through a marketplace and the customer is *theirs*: their app, their data, their re-marketing. Your regulars get shown competitors' ads at reorder time. Direct ordering flips this — every customer joins your database, ready for your loyalty program and campaigns.

Venues that transition successfully do three things: put direct-ordering links everywhere (Google profile, socials, receipts, table talkers), make direct cheaper (the commission you save funds a permanent 10% direct discount and still leaves you ahead), and reward it (double loyalty points on direct orders).
