Where the Margin Went: Recipe-Level Inventory in Action
5 June 2026 · TotalBiz POS Team
An illustrative walkthrough of a venue's first month on ingredient-level stock tracking — variance reports, wastage logs and the reorder rhythm.
Week one: the baseline shock
Recipe mapping connects every dish to its ingredients, so every sale deducts stock automatically. The first variance report — theoretical usage vs actual count — is rarely flattering. The gap is the sum of over-portioning, waste, comps that never got rung in, and the occasional walkout. You can't fix a number you've never seen.
Week two: portions tighten on their own
When Monday's variance lands on a screen at the pass, portioning changes without a single lecture. Chefs are competitive with numbers. The 190g serve that had drifted to 230g quietly returns home, and food cost percentage follows it down.
Week three: ordering to par, not to panic
Par levels and low-stock alerts replace the Thursday guess-order. Suggested purchase orders build from actual usage rates — so the coolroom stops holding a fortnight of slow movers while the fast movers run out on Saturday.
Week four: wastage tells its story
Logging waste with reasons turns 'the bin was full' into a pattern: schnitzel over-prep every Thursday, herbs dying in oversized bunches. Small menu and ordering tweaks follow. Across the industry, food waste commonly runs 4–10% of purchases — recipe-level visibility is how venues claw a meaningful slice of it back onto the P&L.
